Bagel, $6.50 smeared with cream cheese, topped with honey, red onion, avocado
Breakfast burrito, $7, filled with gallo pinto (mixed rice and beans), scrambled eggs, served with pico de gallo, avocado, sour cream
Gallo pinto, $8, with tortillas, fried eggs and a ramekin of sour cream
The creative midday meals can go on any number of directions, and you can have them vegetarian, or hearty with quality local meats:
Veggie pad Thai, $13, zucchini, carrots, cucumber, red cabbage, and an option to add local fresh fish, tossed in orange, peanut butter, ginger dressing
Beef burger, $11, topped with bacon, melted cheddar cheese, lettuce, tomato, avocado on multigrain toasted bun, served with a side of spicy Cajun fries
Dinner entrees are where it gets really fancy. Chef Siles earnestly prides his plating, and you're in for a treat with just about any of his autograph creations:
Gyozas, $8, shrimp, pork, plated with sliced avocado and soy sauce, garnished with ginger
Fish Carpaccio, $8, lemon cappuccino and olive tapenade, plated with orange caviar, capers, red bell peppers, served steaming with a rosemary garnish under a drinking glass
Tuna Tataki, $19, seared tuna over babaganoush (eggplant purée) and tempura shrimp with soy, ginger, mint, lemongrass, honey, oyster sauce
Tuna tartare, $10, fresh tuna, avocado, and South Indian mango chutney, served over a bed of apple sauce
Indian samosas, $7.50 homemade baked golden pastry filled with garam masala and Indian ghost chili pepper-spiced potatoes and peas, served with tamarind chutney
Beef Tenderloin, $22, served with asparagus, topped with frizzled onions, baked basil leaves
Corvina reina (local fish), $22, with curry banana sauce, served over a purée of mashed potatoes, topped with those frizzled white onions
Desserts are just as decadent as Shambala's main menu, $6, divine dark chocolate cake with a scoop of ice cream and a dollop of passion fruit syrup, luscious carrot cake or chocolate mousse.
Ambiance
The kids jumping in the Hotel Tropico Latino's pool next to the restaurant don't quite match its white linens, glassware and extra-formal attentiveness.
Service
Some of the classiest you'll find in Santa Teresa: shirts tucked into slacks, careful water pouring, daily special recitations based off memory, and consistent check-ins to ensure you're satisfied.
